Whole wheat spaghetti with crimini mushrooms in a cream sauce with white wine and pancetta. It was sort of an approximation of one of my former boss's recipes, though after five or so years I can't remember so well how it went. Tasty though.

Macaroni and cheese, made with a little bacon, and plenty of caramelized mirepoix (I'd have preferred trinity, but the store was out of bell pepper).

YIM: Curried goat. I had never had goat before, so when I saw it at the meat shop I visited, I figured it was worth a try. It was really pretty tasty, although there was an awful lot of fat and gristle.

The curried goat sounds interesting. I'm imagining lamb but maybe tougher and stronger-tasting.

YIM: Used some of the left-over pork tenderloin and rice and made fried rice (brown rice, pork, green onion, spinach, white onion, egg). No wok and I have an electric stovetop, but the cast iron skillet performed well enough.

I just made what I consider to be my first really good peanut sauce from scratch. Small dice tofu and mixed vegetables, some chopped shallot, tons of ginger, about 3 chopped bird's eye chilies, and then a can of coconut milk, generous amount of peanut butter, soy sauce and fish sauce. Few pieces of lemongrass simmered in the sauce and a big handful of thai basil leaves added when finished. I think that was it. Very satisfying, not very spicy but a little spicy, and a pretty simple but balanced range of flavors. This makes me very happy.

Dumpling soup. I stewed some chicken thighs, which left them perfectly done, but so soft that any further cooking would not do, then made broth with the bones. I caramelized and onions, celery and carrots, adding to said broth, along with various processed peppers (paprika, chopped soaked dried chili, and fermented chili mash), and whole small tomatoes. I then sauteed some finely diced mushrooms in spices, got all the goodness from the bottom of the pan with a bit of wine, mixed that with the chicken, shredding the chicken in the process, then used that mixture to make filled boiled dumplings with spaetzle dough.

Grandma Burke's oatmeal raisin cookies. I made the first batch the traditional way, with raisins. I decided to deviate with the second batch, so I used cranberries instead. Unfortunately, the cranberry ones ended up tasting almost exactly the same as the raisin ones. I'm going to have to tweak the recipe the next time I make them so that they taste different.

Cheesecake brownies. I added shredded coconut between the cheesecake layer and the brownie layer, which kind of ruined the aesthetic swirl (coconut oil is not very sticky, after all), but it still turned out almost unbearably delicious.

Thai green curry of eggplant and tofu. Made the green curry paste yesterday, and discovered today that it isn't hot enough. I also played a bit fast and loose with the ingredients, and it is not where I want it to be.

Made a basic risotto on Sunday with lots of herbs and cannelloni beans. Had a fair amount left over so I melted some mozzarella cheese into it, added a bit of orange oil and made risotto balls (or suppli di riso) yesterday.

afaik, essentially the same dish, just a different name from a different part of Italy (and so the particulars on ingredients for 'traditional' might be a bit different). I bread them and pan fry them (roll 'em in flour, then egg, then breadcrumbs). Always great with a spinach salad fresh from the garden.

edit: Apparently they're arancini in Sicily and suppli di riso or suppli al telefono in other parts of Italy

I made a fantastic red quinoa pilaf tonight with black beans, kalamata olives, red onion, poblano pepper, Rex Goliath shiraz, bay leaf, thyme and fresh mint. It was one of those nights where I just start adding ingredients and I really didn't expect it to turn out as well as it did. Molto bene, or whatever. I may have drinkened the shiraz also ni addition to cooking with.

Last night, I fried up some vegan sausage patties (lightlife gimmelean), added some sliced, Italian flavored tofu (tofuboy), put it on bread and melted some daiya cheese on top. It needed some sort of sauce as everything was dry, dry, dry, but it was okay. I was exhausted after karate and just wanted to fill up on food before falling asleep... and it was after 11pm, so I can't really be held accountable for my food choices.

Had some very overripe bananas so I made banana pancakes.

1/2c flour, 1/2c oat flour (just grind some whole oats in a food processor), 1/2 tsp baking powder, 2 eggs, 3 bananas, bit of milk.. Blend the banana and egg in a blender (easy method) or by hand. Add everything else. Add in some cinnamon and nutmeg. Add a little flour if it feels runny. I like to add some Benefiber too. Ladle on to a hot skillet. Flip when the holes on the edge hold (cook about 2-3 minutes per side). Enjoy (I put some peanut butter on mine usually)

Chili. Basic version; no tomatoes or beans, no pre-mixed chili powder. Just onions, garlic, various chillies (fresh and dried), some cumin seeds, bay leaves, a stick of cinnamon, dried oregano, cocoa solids. Oh, and chuck eye steak. Simmered in water and beer.

TIM: Didn't feel motivated to do much. Made pizza. Wife has to have low-acid food and avoid a lot of trigger foods. So, made a basic white sauce with lots of herbs, white onion and a bit of tumeric. Topped with some leftover chicken, bacon and broccoli and cheddar cheese.

My basic crust:

3/4c hot water, 2 1/4 tsp yeast, bit of honey... proof the yeast, then add 1c white flour, 1/2c whole wheat, 1/2c ground oatmeal, 1 tsp or so salt. Mix, knead, rise for 15 minutes.

I found things work out awesome if you cook at 450 for 10 minutes. Then add the cheese and cook for another 4-5 minutes.

Almost there pasta salad: spaghetti, peas, onion, garlic, paprika, black pepper, and a sauce of about 4:1 scalded cream to olive oil, with a bit of pasta water.

The texture is almost just right, but I think scalding the cream was not the right thing to do. Soon, I shall have a facsimile of my 2nd favorite side dish of a restaurant long closed down. Soon.

I was pleasantly surprised by the chuck eye; I don't think I've used it before. It got very tender within a couple of hours, and still tasted beefy through all the spices. No more mystery stew meat for me.

Picked up a couple of avocados, of some large variety that apparently is in season in California this time of year, at farmers' market a week or so ago. By today, they were plenty ripe. Yum.

I sliced up half of one and ate it with eggs, black beans, and tortillas for breakfast. Most of the remaining half went on toast for lunch. I got tacos at the cafeteria this evening and added the last bit there.

That still leaves me with the second avocado to try to use tomorrow if I can. It probably will go on toast, in sandwiches, or just be eaten plain. I'd try a smoothie, but it's not really the weather for cold drinks. I think I found a recipe for fried avocado but probably won't try that either.

Also, sometime last week: leftover spaghetti + black beans + tomato sauce + carrots + garlic.

Cooked in a bottle of beer, with salt, pepper, cumin, mustard seeds and lots of other little bits.
I also have a bottle of BBQ sauce to put on it.

Whole grain and sesame bread: wheat berries, millet, oats, and sesame seeds cooked into a thick porridge, then mixed with white flour, molasses, and yeast, after cooling. The first loaf failed. The second, trusting a thermometer more than looks and the thump test, came out dense and tad gummy, but pretty tasty, like those German breads that last forever.

4 ingredient Nutella Cookies

1 cup Nutella, 1 cup flour, 1/2 cup sugar and 1 egg. Mix vigourously, make balls of the mixture and squash with a glass onto a baking tray covered in baking parchment.

I'll add a photo shortly. They taste pretty good, but would be better with chocolate chips or something.

Some sort of chicken and spinach stew. Turned out somewhat cross-cultural: Indian spices, Italian tomato sauce, and Mexican chillies (pasilla, chipotle, fresh serrano). These dried chillies are pretty great; the pasillas add a fruity, almost cherry-like flavor, and the chipotles bring a nice smokiness.
