Had good luck with an improvisation tonight. Braised a large (6#) chicken with orange juice, buckwheat honey quartered clementines and a whole head of garlic. Let it cook covered in a low oven for the afternoon and it was great. Ended up pulling out the bones and shredding the meat, mixing it all up...

Bison and cactus are virtually unheard of where I am, I've had cactus before but don't think I've ever had the pleasure of bison? Lamb and bulgar kibbeh, a sort of stuffed meatball. Mom even went for extras! Also a nice sauce of yogurt, mint and garlic.

Shredding the cabbage and adding some juillienned green apple, then your dressing, is now a winter staple salad at my house.

Tonight dinner was Cornish hens roasted with pineapple and a chili-pineapple glaze. I didn't have quite enough hot pepper in the glaze, but it was still pretty darned good.

Baked stuffed spare ribs. Stuffing with apple, celery, dried cranberries and bacon tossed in with the bread bits. I only made one slab of ribs, because mom hasn't been eating that much lately, but we ended up with NO LEFTOVERS!

We get chipotle in adobo sauce in cans here in the US, and I often freeze what I don't use right away. It's a flavoring enhancer, so I can add it to loads of things. It goes well in taco filling, or a barbecue sauce, or buzzed into mayonnaise for sandwiches.
