I prefer dark meat but some things you can only do with a chicken breast, such as pounding them into schnitzels, or cutting pockets into them for cordon blue or other stuffing endeavors.

We bought duck & chicken sausages at the weekend but we didn't particularly like them on their own (they were very heavy on the chives), so I made kind-of-cassoulet last night. Fried some onion and bacon, added the sliced sausages, and then a tin of butter beans and a tin of navy beans. Cooked i...

The mooling and I made millionaire's shortbread for my dad for Father's Day. Have tried 99% and it's ... something, but it's not chocolate. And not pleasant. An ingredient maybe but not something to be eaten. It's not even primarily the bitterness, but the unpleasant, crumbly, waxy mouth-feel.

I appreciate, in an academic sense, the value of browning meat before stewing; but the realities of a weekday don't turn out that way for me. I am a white sauce heretic. I don't make a roux. Life is short and I always get lumps. It's one of those dishes that you can add and leave out whatever suits your tastes. As with many South African specialities its roots are based in necessity, so beans were a cheap and nutritious addition but I also prefer it without.
